Healthy Wheat Free Bread from a Jug

Ingredients

9 tbs almond flour
3 tbs flax seed
3 large organic free range eggs
1tbs melted coconut oil
a pinch of sea salt
½ tsp baking soda

Bread is a staple, almost biblical part of our diet – give us a our daily bread. The problem with most breads is that they are full of gluten and wheat. Whilst many more people are becoming gluten intolerant, wheat and gluten are also being linked to a number of inflammatory diseases like irritable bowel syndrome, eczema and asthma. This low grade inflammation is also linked to poor skin health and premature ageing.

This bread, which follows the Paleo Diet school of thought, is so quick and easy to make – less than 5 minute. More importantly it’s really tasty and filling even though it contains no wheat. Instead the base of the bread is almond flour and flax seed. The flax seed containing loads of Omega 3 which helpful as this essential fatty acid is lacking in most western diets. Try this bread with your stews or toasted..

Recipe

  1. Mix ingredients.
  2. Grease your jug or other appropriate container. I find my large pyrex measuring jug to be the perfect size.
  3. Empty mixture into your jug and compact the mixture down to eliminate any gaps.
  4. Microwave for 4 minutes. Hey presto – done!
