Soft Savory Sage Salad

Ingredients

50g parsley leaves roughly chopped
50g coriander leaves roughly chopped
20g dill roughly chopped
20g mint roughly chopped
20g basil leaves roughly chopped
50g gems lettuce torn
50g lambs lettuce torn
50g baby spinach torn
50g rocket

With its soft savoury flavour, sage has been prized for millennia for its health benefits. Its binomial name Salvia officinalis is derived from the Latin ‘Salvere’ for “to be saved”. High in vitamin K and rosmarinic acid, sage is now understood to reduce inflammatory responses within the body. This is great for reducing the signs of aging and promoting general good health. This is also a particularly delicious salad.

Recipe

  1. On a medium heat, gently fry the sage leaves until they begin to sizzle and the macadamia oil becomes infused with the oils and flavours from the sage. Set to one side and allow to cool.
  2. Toast the almonds and pumpkin seeds in some fresh macadamia oil until they have begun to brown off.
  3. Whisk the lemon juice and sage infused oil with your salt and pepper.
  4. In a large serving bowl mix all the salad leaves and herbs together. Lightly toss with your seeds, chilli flakes and infused oil. Serve immediately.

30g pumpkin seeds toasted in macadamia oil
1/2 tsp nigella seeds
1 tbs sesame seeds
1/2 tsp chilli flakes
3 tbs macadamia oil
6 sage leaves
1/2 lemon juice of
Himalayan pink salt to taste
Pepper to taste
