Gorgeous Greens

Ingredients

2 tbs avocado oil
3 leeks thinly sliced
1/2 savoy cabbage thinly sliced (see instructions)
1 onion thinly sliced
Parsley and oregano finely chopped (save some coarsely chopped herbs for the garnish)

This is a really simple side that goes really well with any meat or fish dish. It’s really filling and because the ingredients are fried in a good quality oil you get to keep most of the nutrients and all of the flavours.

Cabbage is traditionally cooked by boiling and this is a real waste as most of the goodness is lost in this cooking process, especially the glucosinolates thought to prevent cancer. All cruciferous vegetables have high levels of antioxidants but cabbage is particularly impressive. The high levels of polyphenols present provide anti-inflammatory benefits which reduce oxidative stress which is one of the processes that contribute to skin damage and early onset of wrinkles.

Recipe

  1. For best results halve your cabbage by cutting from top to bottom. Now cut again from top to bottom to quarter your cabbage. Carefully cut out the hard stalk from the centre of your cabbage pieces and now finely slice again cutting from the top of the cabbage to what was the bottom.
  2. In a large frying pan gently fry the onions until they start to soften.
  3. Add in the cabbage, leeks and finely chopped herbs and cook until all your ingredients are cooked through.
  4. Garnish with you coarsely chopped herbs and serve immediately.
