Creamy Dairy Free Chia Pudding

Ingredients

5oz of chia seeds
1 pint of unsweetened coconut milk
1 tablespoon of virgin coconut oil
2 handfuls of fresh strawberries
1 tablespoon of xylitol or pure raw honey 

Chia seeds are all the rage at the moment. And why not? They taste great! They are an amazing health food with loads of protein, essential omega 3 fatty acids, calcium, iron, magnesium and are great for maintaining your energy levels.
Did you know they they’ve been used as a food staple by an amazing tribe of Mexican super athletes who run ultra distance marathons just for fun; even the kids! These little gems pack some punch!
Most chia recipes are dessert recipes and this one is no exception. This one tastes a little like jelly or tapioca and is deliciously light. It also works well as a lovely breakfast treat.

Recipe

  1. Place the strawberries, coconut milk, coconut oil and xylito/honey into a blender and blend.
  2. Add the chia seed and leave the seeds to soak in in the mixture until they swell and become gelatinous. We recommend soaking them for an hour or more.
  3. Garnish with a strawberries and maybe some fresh mint and enjoy!
