Dr Nilu’s Chocolate Pecan Slice Recipe
Ingredients
Steamed sweet potato, 300g
Mashed banana, 100g
Almond flour, 300g
Eggs, beaten, 4
Coconut Oil, 100g
Raw chocolate powder, 5 heaped tablespoons
1 tsp bicarbonate of soda
Honey, according to taste
Handful of chopped pecans for mixture and whole pecans to decorate
This delicious chocolate slice is gluten free! It has a soft smooth chocolaty centre and a chewy crust. It is quick and easy to make and contains raw chocolate powder which is stuffed full of antioxidants! Delicious with chopped fruit and a dollop of coconut yoghurt.
Recipe
- Preheat oven to 180 degrees C
- This is quick and easy to make if you have a food processor.
- Mash the sweet potato and banana and stir until well mixed
- Add the almond flour and mix well
- Add the beaten egg mixture and then the coconut oil and make sure it is well mixed
- Mix the chocolate powder and bicarbonate of soda and add to mixture, mixing well
- The mixture is naturally quite sweet but it you prefer it a bit sweeter, please add honey to taste
- Lastly, add chopped pecans
- Oil a baking dish and then add mixture til it is about 6 cms deep
- Add the pecans to decorate
- Bake for approximately 30-45 minutes (times vary according to oven)
