Celeriac Side

Ingredients

1 leek chopped
1 celeriac chopped
2 cloves of garlic crushed
2 tbs olive oil
1 tbs coriander seeds
1/2 lemon juice of
1 litre of water
Chopped parsley for a garnish

This is a really simple and tasty side dish to prepare. The main ingredient is celeriac which is high in fibre and protein but also relatively low in calories. In this dish the celeriac is used as a potato substitute but is much better than potato as it contains less simple carbohydrates. Celeriac contains plenty of antioxidants including vitamins C and K, and various B vitamins. It also contains a high-level calcium, iron, magnesium, manganese, phosphorus, potassium, sodium, and zinc.

Celeriac does have a stronger flavour than your average potato but does go well with parsley and cumin. This recipe contains both of these and as result works really well. Give it a go and see.

Recipe

  1. In a large saucepan, bring the water to a boil and add the lemon juice and the celeriac. Once cooked, drain and put to one side.
  2. In a wok add your oil, leek, garlic and coriander seeds and gently saute for a minute or two until the leek softens slightly. Now add your cooked celeriac and cook for another couple of minutes.
  3. Garnish with freshly chopped parsley and serve immediately.
